Ingredients Beef Marinade

  • 2 cloves garlic peeled
  • 10g ginger peeled and cut into coins
  • 40g lime juice
  • 50g tamari (coconut aminos for paleo)
  • 40g honey (coconut sugar for paleo)
  • 10g fish sauce
  • Handful fresh mint leaves
  • Handful fresh coriander leaves
  • 650g eye fillet or rump steak


Method Beef marinade

  1. Add all ingredients to TM Bowl and blitz 10 seconds / speed 9
  2. Place meat into glass bowl and ensure the meat is covered in the marinade. Cover and place in fridge for minimum of 4 hours.
  3. No need to rinse bowl as you will now make the salad dressing.


Ingredients Salad Dressing

  • 1 red chili, deseeded cut into 4
  • 1 clove garlic, peeled
  • 1 Tbl. tamari (coconut aminos for paleo)
  • 1 tsp sesame oil
  • 1 tbl fish sauce
  • 30g lime juice
  • 20g palm sugar (coconut sugar for paleo)


Method Salad Dressing

  1. Add all ingredients to the TM bowl and blitz 10 seconds / speed 9
  2. Set aside until dressing the salad after the beef is cooked and rested


Method Cooking Beef

  1. Add water (900g) to TM Bowl, place Beef left whole into Varoma dish
  2. Cook 18 minutes / Varoma / speed 1
  3. Rest beef for 5 minutes before slicing into strips across the grain
  4. At 18 minutes the beef will be medium rare when sliced.
  5. Whilst meat is cooking prepare your salad ingredients


Ingredients Salad

  • 1 large parsnip, spiralized
  • 2 large carrots spiralized
  • 2 Lebanese cucumber’s spiralized
  • 1 red onion, sliced thinly
  • 12 cherry tomatoes, cut in half
  • Lettuce of choice roughly cut
  • A dozen fresh leaves of mint and coriander
  • A handful of roasted chopped peanuts


Method Preparing Salad

  1. Assemble salad in a large bowl and toss all together
  2. Assembling the salad
  3. When beef in cooked and rested slice and add to salad with salad dressing toss all together and serve

 

Don’t have a Thermomix or Spiralizer – Use a food processor to make marinade and salad dressing, Cook beef on BBQ or pan fry, Cut salad by hand or grate by hand
