Cooking time 20 minutes.
Ingredients Beef Marinade
- 2 cloves garlic peeled
- 10g ginger peeled and cut into coins
- 40g lime juice
- 50g tamari (coconut aminos for paleo)
- 40g honey (coconut sugar for paleo)
- 10g fish sauce
- Handful fresh mint leaves
- Handful fresh coriander leaves
- 650g eye fillet or rump steak
Method Beef marinade
- Add all ingredients to TM Bowl and blitz 10 seconds / speed 9
- Place meat into glass bowl and ensure the meat is covered in the marinade. Cover and place in fridge for minimum of 4 hours.
- No need to rinse bowl as you will now make the salad dressing.
Ingredients Salad Dressing
- 1 red chili, deseeded cut into 4
- 1 clove garlic, peeled
- 1 Tbl. tamari (coconut aminos for paleo)
- 1 tsp sesame oil
- 1 tbl fish sauce
- 30g lime juice
- 20g palm sugar (coconut sugar for paleo)
Method Salad Dressing
- Add all ingredients to the TM bowl and blitz 10 seconds / speed 9
- Set aside until dressing the salad after the beef is cooked and rested
Method Cooking Beef
- Add water (900g) to TM Bowl, place Beef left whole into Varoma dish
- Cook 18 minutes / Varoma / speed 1
- Rest beef for 5 minutes before slicing into strips across the grain
- At 18 minutes the beef will be medium rare when sliced.
- Whilst meat is cooking prepare your salad ingredients
Ingredients Salad
- 1 large parsnip, spiralized
- 2 large carrots spiralized
- 2 Lebanese cucumber’s spiralized
- 1 red onion, sliced thinly
- 12 cherry tomatoes, cut in half
- Lettuce of choice roughly cut
- A dozen fresh leaves of mint and coriander
- A handful of roasted chopped peanuts
Method Preparing Salad
- Assemble salad in a large bowl and toss all together
- Assembling the salad
- When beef in cooked and rested slice and add to salad with salad dressing toss all together and serve
Don’t have a Thermomix or Spiralizer – Use a food processor to make marinade and salad dressing, Cook beef on BBQ or pan fry, Cut salad by hand or grate by hand
