2 cloves garlic
6 sun dried tomato’s
10g oil of choice
810g tin crushed tomato’s (I use admora brand)
10g sugar of choice
20g vegetable stock paste
180g Thickened Cream or Milk
Optional Garnish – basil leaves, shaved parmesan
- Place garlic (2), sun dried tomato’s (6) into Thermomix bowl.
- Chop 3 seconds / speed 7, scrape down sides and repeat 3 seconds / speed 7 Scrape down sides
- Add oil (10g) cook 3 minutes / 100 degrees / speed 1
- Add tin crushed tomato’s (810g) , sugar (10g), vegetable stock (20g) and water (300).
- Cook 12 minutes/ 110 degrees / speed 2
- Add 180g thickened cream or milk.
- Blend 30 seconds speed 4 * TIP – Do not go above speed 4 or your soup will loose its vibrant colour
Serve as is or garnished with basil leaves and or parmesan if you like.
