Ingredients

2 cloves garlic

6 sun dried tomato’s

10g oil of choice

810g tin crushed tomato’s (I use admora brand)

10g sugar of choice

20g vegetable stock paste

300g water

180g Thickened Cream or Milk

Optional Garnish – basil leaves, shaved parmesan

 

Method

  1. Place garlic (2), sun dried tomato’s (6) into Thermomix bowl.
  2. Chop 3 seconds / speed 7, scrape down sides and repeat 3 seconds / speed 7  Scrape down sides
  3. Add oil (10g) cook 3 minutes / 100 degrees / speed 1
  4. Add tin crushed tomato’s (810g) , sugar (10g), vegetable stock (20g) and water (300).
  5. Cook 12 minutes/ 110 degrees / speed 2
  6. Add 180g thickened cream or milk.
  7. Blend 30 seconds speed 4 * TIP – Do not go above speed 4 or your soup will loose its vibrant colour

Serve as is or garnished with basil leaves and or parmesan if you like.
