Ingredients

  • 120g passionfruit pulp (approx. 6 passionfruit)
  • 600g double cream
  • 100g caster sugar
  • 40g lime juice
  • 2 extra passionfruit for serving

Method

  1. Add 120g passionfruit pulp to TM bowl and blitz for 5 seconds / speed 7
  2. Set aside in a fine mesh strainer over a bowl to drain liquid and rinse TM Bowl
  3. Add double cream (600g) and caster sugar (100g) to TM bowl cook 3 minutes / 95 degrees / speed 1.5
  4. Scrape down sides and cook another 2 minutes / 98 degrees / speed 1.5
  5. Add the strained passionfruit juice which should weigh approx. 60g after being strained along with lime juice (40g)
  6. Mix 30 seconds / speed 3
  7. Pour into glass dessert glasses and chill for a minimum of 4 hours before serving
  8. Top with fresh passionfruit pulp before serving

TIP  –  when straining passionfruit juice use the spatula to aid in pressing the juice through the strainer.
