Ingredients

  • 350g ripe bananas (approx. 3 large ripe bananas)
  • 2 eggs
  • 1 tsp vanilla bean paste
  • 260g plain flour
  • 70g cocoa powder
  • 200g caster sugar
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp bicarbonate soda
  • 120g milk or coconut milk for dairy free
  • 250g water
  • 120g coconut oil or vegetable oil


Method

  1. Pre heat oven to 180 degrees and prepare silicone cupcake moulds.
  2. add bananas, eggs, sugar, salt, baking powder, bicarb soda to TM bowl and mix 10 seconds / speed 4
  3. Scrape down sides
  4. Add milk, water, coconut oil. Mix 20 seconds / speed 4
  5. Pour into prepared moulds / cases and bake for 17 to 20 minutes, this will vary depending on your oven.


Tips 
– These freeze really well for lunchbox treats or prepare ahead for that next birthday party
