Serves 6
Preparation time 10 minutes
Cooking time 8 minutes.


  • 1kg chicken tenderloins
  • 3 eggs
  • 150g rice
  • 220g cornflakes
  • oil of choice to shallow fry


  1. Add cornflakes to TM Bowl and blitz 10 seconds / speed 9 set aside in a zip lock bag
  2. If making rice flour add rice to TM bowl and mill 1 minute / speed 9 set aside in another bowl
  3. Place eggs in another bowl and whisk with a fork
  4. Dip chicken in rice flour, then egg mixture and finally in the corn flakes crumbs pressing the crumbs onto the chicken to coat
  5. Place chicken as coated onto a plate, cover and place in the refrigerator for minimum of ½ an hour
  6. Add oil to pan and heat to medium, shallow fry the chicken in batches turning once, remove from pan once cooked and place on paper towel
  7. Serve with salad of choice or place on wraps

Don’t have a Thermomix use a food processor to make cornflake crumbs and rice flour
